Authentic chrysanthemum delights at Yamazato restaurant

THE symbol of the Japanese Imperial House and an indicator that autumn has arrived, the chrysanthemum flower, or ‘kiku’, has been venerated in Japan for thousands of years.

During autumn, the flower is celebrated at festivals featuring lavish floral displays with chrysanthemum blossoms that have been specially cultivated for the occasion. At this time of year the flower petals are even included in traditional dishes.

To celebrate the season of the chrysanthemum, Master Chef Shigeru Hagiwara at award-winning Yamazato restaurant has created a chrysanthemum Gozen lunch platter and an 8-course Kaiseki dinner. Highlight ingredients include Momiji sea bream, goby, chestnuts, ginko nuts, saury fish, and modori bonito

Stars of the Gozen platter comprise tempura, soup, sashimi, and a simmered dish of sweet fish with roe, taro, pumkin, and carrot. The Kaiseki menu includes showcase dishes such as a starter of torched marinated mackerel, shrimp, mountain potato, maitake mushroom, tomato, and caviar with Yoshino chrysanthemum vinegar, a sashimi presentation encompassing tuna, yellow tail, seasonal saury fish, and sweet shrimp, and a special dish of foie gras with mushroom and leek sauce.

The Chrysanthemum promotion at Yamazato restaurant runs from September 3 – 23, 2018, lunch 11:30 a.m. – 2:30 p.m., dinner: 6 p.m. – 10:30 p.m. Priced at 1,300++ baht for Gozen lunch and 4,500++ baht for Kaiseki dinner.
