Tim is recognized as one of the UK’s most exciting and influential young chefs. His impressive pedigree includes Michelin star restaurants The Clove Club and The Ledbury in London, and the Quay in Sydney. Tim’s latest project with his partner Louise Roedkjaer is a rural guesthouse in Cornwall that attracts guests from around the world who come to enjoy “farm to table” cuisine.
At Sheraton Grande Sukhumvit, Tim’s menus will reflect his philosophy of carefully selected seasonal produce, prepared simply and served with flair and creativity. On Tuesday November 13, the gifted chef will surprise guests at DID – Dine in the Dark with delicious dishes served in total darkness. Designed to increase awareness about blindness and raise funds for an inspirational local charity, DID – Dine in the Dark is an extraordinary culinary experience. Dining in total darkness is a journey for all your senses – except one. DID – Dine in the Dark with Chef Tim is 1,950++ baht or 2,500++ baht with wine pairings.
On Wednesday November 14, Tim will showcase his signature dishes at Rossini’s. Seated in the enchanting Tuscan villa setting, diners will be served a divine 4-course dinner of flamed mackerel sashimi with gooseberry and elderflower, grilled scallops with sugar braised kelp, seaweed mustard and smoked scallop broth, honey glazed duck with pumpkin, bitter leaves and devilled spices, and burnt mandarin granita and yogurt mousse. Rossini’s sommelier will recommend wines to complement Tim’s highly accomplished dishes.
