Factory explains, Chicken feet skin extraction by mouth.
The factory has come out to explain why employees are seen using their mouths to extract the skin off of chicken feet after viral video takes over Thai social media. Ronnachai Jitwiset the governor of Nong Khai Province, officials from the Nong Khai Provincial Public Health Office, and other related officials went to inspect a food factory in the main city of Nong Khai on 29 January 2020.
When officials arrived they met Nonglak 31 years old the owner. The factory produces chicken feet skin called leb-mue-nang in Thai, a delicacy for many in Thailand often used in spicy salad dishes (Yam). The method of extracting the chicken skin at the factory is by mouth. Employees are seen sitting across each other with tubs of chicken feet and chicken feet skin in front of them. Netizens were shocked to see the video, employees will pick up a chicken foot, use their teeth to bite the chicken skin off the bones before spitting it out into another tub, all of this is done extremely fast with skills that collected over time. Officials from the public health office tested the finished product for contamination and any dangerous chemicals, results came out negative.
Nonglak stated that she has been making chicken feet skin for 5 years. The chicken feet are bought in bulk before it is skinned by the workers. About 3 tons of skin is made per batch and 400-500 kilograms are sold to customers every day. At first, the factory used pliers but it took about 5 minutes to skin 1 chicken foot and customers didn’t even want to buy her product because the skin was all ripped and messy. The product had to be thrown away. This is when she let employees use their mouths to extract the chicken skin off the feet and it worked 5 times faster compared to pliers, the skin also came out beautiful.
Since the video showing how the product was made Nonglak now promises to train her employees to use pliers instead of their teeth. Other factories have also been warned and will be changing to using pliers also. Nonglak has temporarily closed down the factory and will reopen when her staff has mastered the pliers. She also revealed that employees get regular dental health care.
